Day 177—26 April 2012 Getting there Saturday will be the 80th Annual Palatine Relays. My contribution to tonight’s pasta dinner was a plate of peppermint whoopie pies (I also shared with a friend, froze a couple for NOS, and made a plate for Tom’s office). I used the same chocolate cake recipe as last week’s, but I used the called-for buttermilk (last week, I substituted whole milk). I used a medium scoop (instead of large), which was perfect. Most exciting may be the peppermint filling. We picked this one from four that I found online (there were more). The consistency was smooth and lovely. I’ll try different extracts in the future—if they work as well, I think we have our go-to filling recipe. Woo hoo!
