Day 143—23 March 2012
Tom is always trying to find ways to expand my extremely limited list of tolerated veggies. Since my birthday, we’ve been the proud owners of a mandoline (it was a necessary piece of equipment for one of the Pinterest recipes I found). Now carrots and zucchinis (for example) may be snuck into meals. There were also pea pods, bean sprouts, mushrooms, onions, and red bell peppers in dinner; but, I don’t mind those in normal-sized pieces. I snacked on some of the tiny carrots/zucchini before dinner, ate all that were on my plate, and finished most of Adam’s veggies, too. I guess it’s all in the presentation!
